Frozen Chocolate Chip Cookie Dough Bites
Serving Size: 4 Prep Time: 20 min. Cook Time: 30min. Total Time: 50min
Ingredients:
Cookie Dough
1 cup cashew flour
½ cup + 2 tbsp rolled oats (ground into flour)
½ cup walnuts (chopped)
⅓ cup coconut nectar (or maple syrup)
1 tsp vanilla
½ tsp of cinnamon
½ tsp salt
¼ cup of chocolate chips (chopped)
Chocolate Coating
¼ cup cacao powder
¼ cup coconut oil (melted)
2 Tbsp coconut nectar (or maple syrup)
Instructions:
Combine all ingredients in a bowl with your hands, until well mixed.
Form into a large ball, wrap well with wax paper or parchment paper, and freeze for 30 minutes.
Mix cacao powder, coconut oil, and coconut nectar into the bowl with a fork until smooth and set aside.
Take cookie dough from the freezer, and using a mini-ice cream scooper, scoop the dough into balls on a parchment-lined cookie sheet.
Take each ball on a spoon and dip it into the bowl of chocolate coating and place it back down onto the parchment, while the coating hardens.
Store in the freezer in an airtight container.
Peppermint Mocha Latte
Serving Size: 2 Prep Time: 7 min. Cook Time: 5 min. Total Time: 12 min
Ingredients:
2 cups unsweetened vanilla almond milk
2 Tbsp espresso, instant powder
1 ½ tsp Truvia
2 tsp unsweetened cocoa powder
⅛ tsp mint extract
2 peppermint hard candy (crushed)
Instructions:
In a medium saucepan, whisk together almond milk, espresso powder, Truvia, and cocoa.
Cook over medium heat, hot but not boiling, for 4 to 5 minutes.
Remove from heat and stir in mint extract.
Pour into a blender and blend on high until frothy, around 30 seconds to 1 minute.
Pour mixture into two mugs and top with crushed peppermint candy. Serve immediately.

Baked Apple Nice Cream
Serving Size: 2 Prep Time: 10min Cook Time: 30min Total Time: 40min
Ingredients:
Baked Apple
1 apple (chopped)
1 tsp vanilla
2 tsp cinnamon
2-3 tsp water
Banana Nice Cream
2 Frozen Bananas
1 tsp vanilla
1 tsp cinnamon
¼ cup unsweetened almond milk
Instructions:
Freeze 2 bananas 24 hours before preparation of the recipe.
Chop apple into square bite-size pieces
Mix apple, vanilla, cinnamon, and water in a small oven-safe dish. Depending on the dish size, more water may be needed. Make sure the bottom of the dish is covered in a thin layer of water.
Cover dish with lid or tinfoil and bake for 30 min at 350 degrees.
Blend 2 frozen bananas, vanilla, cinnamon, and almond milk until smooth.
Serve the nice cream in a bowl and top with baked apple. Serve immediately.
Pumpkin Mug Cake
Serving Size: 1 Prep Time: 2min. Cook Time: 2min. Total Time: 4min
Ingredients:
2 Tbsp Coconut flour
1 Tbsp Almond flour
¼ tsp baking powder
1 Tbsp Truvia
¼ cup pumpkin puree
1 large egg
1-2 Tbsp unsweetened almond milk
1 Tbsp chocolate chips
Instructions:
In a small mixing bowl, sift the almond flour and coconut flour. Add the baking powder and Truvia, and mix well. Add the egg, and canned pumpkin and mix until fully incorporated. Stir in the chocolate chips.
Spray a mug or small bowl with cooking spray, generously. Pour in the batter and top with extra chocolate chips. Microwave the mug cake for 1-2 minutes.
Remove from the bowl and allow to cool for a minute before enjoying.
Strawberries and Cream Graham Cracker Sandwich
Serving Size: 1. Prep Time: 5min. Cook Time: 0min. Total Time: 5min
Ingredients:
2 Tbsp fat-free whipped cream
1 medium strawberry (sliced)
2 squares cinnamon graham crackers
Instructions:
Place strawberries onto 1 graham cracker square.
Top with whipped cream and second graham cracker square. Serve immediately.
